Many of you know that we have complimentary writing on cakes, or chocolate plaques if the dessert doesn’t have a large enough flat surface. Chef has been writing on cakes for quite a long while now, and honestly, your friendly blogger wishes his handwriting was half that neat.
One facet that isn’t always apparent in dessert production is that one may need a lot of manual dexterity at times. A lot of chocolate work doesn’t require it, using instead molds, guides or other means of creating lines and shape. Show and display pieces might though, and dessert work can require a lot of free-hand for final decoration or plating. If you are going to work with cake decorating at all, then a steady, dexterous hand is required.
