A few photos from some custom bread work last week. An customer with a large event requested a few display pieces to determine which of several looks would be the best for their needs. Chef and Monica ran off a few miche with texture and display details, and some of the process is interesting to see.
To start with, there is an old brass press-mold of a leaf. They made quite a few leaves for use on 2 of the loaves. Chef then rolled out some unleavened dough that was used for backing and attaching the decorations. These pieces are lightly glued into place using just a touch of water. With the frame and outline provided, various pieces of live dough (leavened and will rise) and dead dough (unleavened, and will not rise or distort) are used to create the display. A small pair of scissors is used to add some extra texture to the leaves after they are attached, and they also are used to create wheat-stalks. With unleavened dough, the points remain quite ‘sharp’ and the details clear.
We’ll probably be seeing a bit more of this as Monica starts getting into studies on artistic bread and the various elements used to create it. As interesting pieces come up, we’ll definitely share. Who knows, we might end up with a competition style show piece to display in the next couple of months!
