This morning saw a chocolate chip sweet roll come out. It’s a lighter, yeasted roll and makes for a nice presentation. If you like chocolate and peanut butter, this might be an interesting roll to try for breakfast.
The mixing and shaping is pretty similar to other loaves and rolls, but the final detail is interesting- a series of small slits cut into the surface to it expands as it bakes. Yes- that is a standard razor blade for old-school safety razors, which are found at corner drug stores. They score much easier than a knife (the thinness helps) and are a bit less per blade than a lame (remember, say that with a French accent), and we can walk to the store to get more, rather than order them and have them delivered.
It’s another big bread day- more pan bread, brioche loaves (easily torn into rolls), and miche, amongst others. Have a great start to the weekend!
