What’s up with Chocolate?
Chocolate is starting a little late this year. It’s actually cool enough to get production started, but we’re looking at changing up the line a little and possibly adding some other confections. We haven’t decide what will be retired yet, nor what the new ones might be. There were a couple of ganaches that were a bit cantankerous to work with (broke easily, etc.) so they will have to be reformulated or replaced.
As for other confections…we’ve had a few thoughts along the lines of caramels and/or nougats. This isn’t completely decided yet, we’ll have to go through a few test batches to see what we like and what will fit with our style of production.
So, chocolates and confections are on their way back, and relatively soon! We’ll let you know when they are definitely scheduled to come out. This does mean that macarons will be moving out of their current case, and back into the tower case, which also means that gelato is retiring (well, retired as of this posting).
