Here’s Faustino rolling up the ‘snail’ for our cream cheese danish.  Starts with Danish dough, laminates and then squares it up.  A bit of cinnamon-sugar dressing, and this is folded in half and cut into about 3/4” strips.  From here, he takes a strip, pulls it straight, rolls one end out to twist the strip, and then a wrap to make the final shape.  He was kind enough to slow down and pause for photos!
